Chicken Enchiladas: A Mexican Classic

Ingredients:

  • 12 corn tortillas
  • 1 cup shredded cooked chicken

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).

  8. Bake for 20 minutes, or until the cheese is melted and bubbly.
  9. Serve with sour cream, guacamole, and salsa.

Tips:

  • To make the enchiladas ahead of time, assemble them according to the instructions but do not bake them. Cover the baking dish with foil and refrigerate for up to 24 hours. When ready to bake, preheat the oven to 350 degrees F (175 degrees C) and bake the enchiladas for 30 minutes, or until the cheese is melted and bubbly.
  • If you do not have enchilada sauce, you can make your own by combining 1 can (10 ounces) of tomato sauce, 1/2 cup of water, 1 tablespoon of chili powder, 1 teaspoon of cumin, and 1/2 teaspoon of salt. Bring to a simmer and cook for 10 minutes.
  • For a spicier enchilada, add 1/4 teaspoon of cayenne pepper to the enchilada sauce.
  • To make the enchiladas vegetarian, substitute black beans or lentils for the chicken.
